This fascinating (Shweta Padmasana Devi) art work during Covid19, the worst global pandemic is submitted by Architect Jyoti Swain. It is a deeply moving piece of (art of painted life at the time of quarantining) work that we feel fortunate to put it in our featured wall. Thank you, Jyoti for your valuable contribution. We think it will surely comfort millions particularly millennials of our society who lost their jobs and are going through a tough time at the time of deadly covid 19 pandemic and back our mental health awareness campaign!

Jyoti says:

 With a prayer in mind, devotion in heart and paintbrush in hand, I have tried to paint my canvas with a depiction of the Goddess whose beloved is the ‘shweta’ (white) colour.

The honks and squeaks on the roads have vanished and so has the morning hustle to prepare for another day of deadlines. The chirps and tweets of birds are clearer and so is the sound of gurgling water. Long official calls have finally taken a break and have been happily replaced by group video calls with friends and family. With a certainty of no get-togethers or neighbours dropping by, it is probably a once in a lifetime chance to completely focus on long left hobbies. And, most importantly on self and above all God.
All thanks to our frontline fighters who putting themselves at stake for the upliftment of our dear earth have made it possible for lay people like me to safely remain in the safe enclosures of my little world.

The past few meals have become more interesting as we sit by the dining table positioned by the window overlooking a tree. Differently hued and sized birds perch by near the branches, leaving us amused. And, with a strong realisation about how less we know about this vast universe and its creations.

As the sound of birds is becoming clearer day by day, so is the occasional blaring of televisions and boom boxes.

The Quintessential Odiya Dessert – ChennaPoda

About: Said to be Lord Jagannatha’s favorite, ChennaPoda is quite the quintessential Odiya dessert.
Owing to the closure of the many sweet shops and bakeries, this lockdown sure forced me to try out many recipes. And, ChennaPoda being a hit amongst them.
Ahh, the aroma as I baked it, instantly reminded me of my dear hometown. And, the first bite sure flew me back to the bylanes. A strong hit of nostalgia, I must say is attached to this Odiya dessert for me.
• 2 Lts Whole Milk
• 4 Tbsp Suji/ Rava
• 8 – 10 Tbspn Sugar (adjust as per taste)
• 1 Tbsp Ghee
• 2 – 3 Cardamoms, crushed
• Few cashews
• Vinegar
• Butter Sheet

• Bring the milk to a boil and add about a tbsp of vinegar to curdle the milk.
• Switch off the flame and strain the curdled milk or better known as chenna. Retain at least a cup of the whey in a separate container.
• Add the suji, sugar, ghee and crushed cardamom. Mix well until the sugar melts completely and a uniform mixture is formed. Mix, but do not knead.
• Add about a couple of spoonfuls of whey to the batter and mix. The final consistency should be as semi-thick (similar to the consistency of idli batter).
• Add more whey and mix until the consistency is achieved.
• Grease a cake mould lightly with ghee and line it with butter sheet. Pour the batter and smoothen the surface with a ladle. Tap it a couple of times to release any trapped air bubbles.
• Toss it into a pre-heated oven of 180C for about 50 minutes.
• Once the surface starts to turn into a golden brown colour, prick with a knife/ skewer and check for any sticking batter. If the tester comes out clean, take the cake pan out of the oven and let it cool for at least 15 minutes.
• Place a plate over the cake pan and turn it over. After removing the pan, peel the butter sheet slowly as otherwise there are chances of small portions coming off along with the sheet.
• Now, while controlling the strong flow of saliva, cut the chennapoda without dropping any drool.
• With contention in heart and mind, sink your teeth into the chennapoda and linger in food heaven for as long as your tongue permits.
